Although I hate to admit it, sometimes I feel very lazy. You know those days that you just want to go home, put your sweat pants on and eat cereal for dinner? Unfortunately, Chris doesn’t consider cereal an adequate dinner. Those days I’m thankful for this little gem. This meatloaf is awesome. It’s easy to prepare, not too heavy and I usually have all the ingredients on hand. Not to mention it’s so versatile. You can put practically anything in it. Well, maybe not chocolate chips.
I’ve probably made this meatloaf 20 different times. I’ve tried it with goat cheese and parsley, jalapeno and BBQ sauce, cheddar and cilantro; but this variation is my favorite. This is the perfect recipe for anyone who is eager for fall to start.
- Cooking spray
- ½ cup plain bread crumbs
- ½ cup fresh spinach- roughly chopped
- ½ cup frozen cranberries- thawed
- 2 eggs
- 2 Tbs 2% milk
- ½ cup feta cheese
- 1.25 lb ground turkey
- Preheat oven to 375 degree. Spray a 9”x 5” loaf pan with cooking spray. In a medium size bowl mix together the bread crumbs through pepper. Add the turkey and stir to combine. Pack the mixture into the loaf pan and bake for 35-40 minutes, or until temperature reached 165 degrees.
