I know it’s been a while since my last post, but I have good reason for it. Reason 1) I turned 25 which involved celebrations and dinners and drinking and unfortunately blogging didn’t make it to the top of my list that week. Reason 2) While turning 25 I got a brand new camera! It’s a Nikon D5200 and I love love love it. But I don’t know how to use it. So I’ve been spending a good deal of time fiddling with that. Reason 3) I don’t really have a reason number three but I feel like if you’re going to list reasons for something, you should at least have three.
I guess I could tell you a little about this recipe now. I started a garden earlier this year and the only thing I could get to thrive was my basil. I planted jalapenos, tomatoes, bell peppers, basil, oregano, lavender, cilantro.. the list goes on. Half of it was trampled by my vivacious puppy dog (who isn’t really a puppy) and what wasn’t trampled just didn’t grow. So long story short, the only thing I could get to grow was basil and I was so proud of it that I wouldn’t pick any of it so now that growing season is ending I decided I would pick it all and make it into something fabulous. And the only thing I could come up with was pesto. But let me assure you, this is fabulous pesto.
What do you think of the new photo? Can you tell it’s from a different camera than my photos before? Just so you know I have no idea what I’m doing when it comes to taking pictures. I just press a lot of buttons until I get the outcome I was hoping for.
Oh and one more thing, watch out for the garlic in this recipe. If you’re someone who loves garlic and automatically doubles it for every recipe, be forewarned. That would be a very bad idea here. I know, because I did it.
- 2 cups packed basil
- ¼ c pine nuts
- 1 large garlic clove
- ½ cup olive oil
- ½ cup Parmesan cheese
- In a food processor, pulse the basil, pine nuts and garlic together until coarsely chopped
- Slowly add in oil and pulse until combined
- Mix in cheese and serve with slices tomatoes and mozzarella or pasta
